Fillets of Mediterranean anchovies, breaded.
It was Neapolitans' favorite street food; the fried anchovies were placed in a rolled sheet of paper, the CUOPPO, and served still steaming. Today appreciated throughout Italy, they are added to fried fish or dressed with a special sauce prepared with garlic, vinegar, mint, parsley, salt and chilli pepper (alla “scapece”).
